What is for Dinner?
Ingredients
2 tablespoons vegetable oil
1 onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can chicken broth { I use less Sodium}
1 (18.75 ounce) can tomatillos, drained and chopped {I use Herdez Salsa verde fora better taste}
1 (16 ounce) can diced tomatoes
1 (7 ounce) can diced green chiles
1/2 teaspoon dried oregano
1/2 teaspoon ground coriander seed
1/4 teaspoon ground cumin
2 ears fresh corn { I use frozen corn}
1 pound diced, cooked chicken meat
1 (15 ounce) can white beans {If there is sodium in the can rinse first}
1 pinch salt and black pepper to taste
Directions
Heat oil, and cook onion and garlic until soft.
Stir in broth, tomatillos, tomatoes, chilies, and spices. Bring to a boil, then simmer for 10 minutes.
Add corn, chicken, and beans; simmer 5 minutes. Season with salt and pepper to taste.
{We eat this chips, fresh squeezed lemon and sour cream or plain yogurt (I prefer the yogurt), reduce cheese, onions}

Why now?
I have always said I am not a "school" person, this is what I thought. Yet, I have been drawn to school ever since I graduated high school. I am not new when it comes to the whole college experience I just haven't found my passion until now. About three in half years ago I found out I had Poly Cystic Ovarian Syndrome. It was such a blow I had my daughter so easily that I never thought that I would be in situation, but there I was.
After my first pregnancy I had gain 50lbs after that I gain another 20lb. I knew exactly how this happened. When I was pregnant I wasn't gaining enough weight and my doctor gave me the green light to use my pregnancy as an excuse to eat anything I wanted; and I did! I thought I didn't like all the pastries but with pregnancy it turned out I did. I ate and ate and ate, then after having my baby instead of returning to my old eating habits I ate like I was pregnant. Then I gained the last 20 lbs.
So that is how I got here, what made this overweight girl try to break out in this field? Well a wake up call. My husband lost his job and with that our fertility insurance, then 6 months later a cyst bursted. I was now in a position where I had a problem and couldn't go to my specialist to fix it. I had a choice I could ignore it and let my problems carry on or I could change. After watching my SIL give up sugar to help her Asthma I could not help but try it. After the first month I had an ultra sound and it showed up only one cyst, and it was normal! The follow up to that showed no cyst and I had a positive ovulation test for the first time ever with out medical assistant!
After that is when I deiced to bury myself into diet books, the more I read the more I loved it! I keep thinking I could this, I could out advice and help people. So when my daughter started school for the first time I thought why not? I enrolled the next day!
